I'm doing something a little different this week. I'm sharing this delicious recipe from a fellow blogger, Jessica in the Kitchen. Not everything she does is vegan, but a lot of it is and usually very healthy. I love most of the stuff she's putting out there so check her out!
This salad has everything I love. It's vegan, healthy, quick, one dish meal, beautiful, and very yummy! Its also loaded with plant based protein.
Prep was quick and as you can see you just throw everything into the bowl, put some of that delicious sauce on top, combine and serve! Prepare ahead of time and have it ready for your family when you get home. Don't forget to take those leftovers for lunch!
Can we discuss the sauce? I'm pretty sure I'll use this one over and over again. Maybe soon in a tofu dish, whatever I put it on I'm sure will transform into delicious! Make sure you save this one.
