I have had this recipe for ages. I think even before I myself was vegan. I have no clue where I got it from and I never tried it before. I wish I could give credit to whoever created this recipe because it was very excellent! Combine these falafel babies with some fresh veggies and the magic dressing(Sriracha and Mayo) and you have one delicious pita. I think these would also be great with a vegan ranch dressing, yum!
Daisy is always there to help me out in the kitchen, and today Max joined in as well. Now I don't want you to feel sorry for Daisy because she looks so hungry. Believe me her and Max get tons of veggie scraps and that's why they're always there waiting.
What you will need.
For the Falafel
2 15.5 oz canned chickpeas
4 tbsp of chickpea brine(liquid from can)
1 handful of fresh parsley or cilantro
4 cloves of garlic
2 tsp of turmeric
2 tsp olive oil
salt and pepper to taste
For the Veggies
1 orange or red pepper thinly sliced
1 ½ cups of red cabbage shredded
½ red onion thinly sliced
1 bag or a small head of greens of your choice. I used a mix of baby spinach, kale, and chard. Chop it up!
For the Magic Dressing
1 cup of vegan mayo
3 tbsp of sriracha or what ever makes you happy.
6-8 Pitas of your choice.
What do you do?
Preheat the oven to 400*F
To prepare the falafel. Mix all ingredients together in a blender or food processor. Blend until smooth. Form balls with your hands. You'll get an idea of the size from the pictures. Bake for 20 minutes or until the bottoms get a little brown.
Chop and slice veggies and combine in bowl.
Prepare dressing by mixing ingredients together and set aside in fridge.
Once falafels are done remove from oven and let cool to room temperature.
Prepare your pita.
Take your pita and spread some of the magic dressing on the inside. Depending on the size of the pita put a small handful of the salad mixture in the pita. Add some falafels and top with more magic dressing. Serve with more magic dressing on the side, can you tell I like the magic dressing!
This is a really quick and easy meal. You can make the falafels and the dressing ahead of time and have a five minute meal, work lunch, or after school snack.
