This month I will be making health concious vegan dishes. It's that time of year again, thinking about Spring/Summer and how we might need to squeeze into a bathing suit soon! Maybe your just looking to take better care of yourself. These will be quick, easy, and family friendly.
This recipe is very simular to the last wrap I did. You can have your family customize their own bowl just the way they like. This makes it more fun and yummy for everyone!
Once the weather gets warmer these are the kind of things I like to prepare for dinner. I don't want to spend too much time in the kitchen, I want to be outside as much as possible.
I went food shopping and got all these beautiful veggies. I decided to prepare this dish and then continued prepping the food for snacks for the kids, this way nothing goes to waste! Let's get started!
WHAT YOU'LL NEED
Feel free to improvise with the things you like!
Small package of sliced mushrooms
1 zucchini sliced in strips
2 large carrots thinly sliced in strips
½ red and orange pepper sliced in strips
1 red onion sliced
4 garlic cloves sliced
1 Mango chopped
1 avocado sliced
3 green onions chopped
A couple of handfuls of kale with stems removed and chopped
Salsa, your preference
1 can black beans, heated up
2 cups of cooked quinoa
½ tsp garlic powder
½ tsp onion powder
½ tsp lemon juice
2 ½ tbsp olive oil
WHAT TO DO?
In a large saute pan on medium, heat 2 tbsp of olive oil. Add onion, peppers, carrots, garlic, and mushrooms. While cooking add salt and pepper to taste and garlic and onion powder. Saute until slightly soft with a little bit of crunch. This is the way I like it. Feel free to cook longer if you like. Remove from heat and set aside.
Prepare other fruits and veggies and you're all set to make up your bowls.
To prepare kale I like to to massage it with a little lemon juice and salt. This softens it up a little so it's not as chewy. Take the kale and sprinkle with some lemon juice and salt, you don't need much. Then massage gently with hands until it feels just right to you. This step is not necessary but I like to do it.
Put it all together and make your own personal bowl. I added everything because I love food!!
