I love making a huge batch of these burritos and freezing them for a quick home cooked meal and healthy options for my kids when they get home from school!
Sweet Potato Black Bean Burritos
What do I need?
4 medium sweet potatoes peeled and diced
3 tbsp olive oil
¼ tsp salt
1/4 tsp cayenne (adjust for your personal heat level)
½ tsp cinnamon
1 small onion diced
1 red pepper diced
2-3 cloves of garlic minced
1 15.5 ox can of black beans drained and rinsed
2 cups of frozen corn
1tbsp of chili powder
2 cups of brown rice cooked in veggie bullion
½ cup of chopped fresh cilantro
½ cup nutritional yeast (optional) but adds great flavor!
1 cup vegan cheese (optional)
10-12 10 inch whole grain wraps
What Do I do?
Pre heat oven to 400 degrees. Take chopped sweets, 2 tbsp olive oil, salt, cayenne, and cinnamon. Mix together and place on a lined baking sheet, bake for 25-35 minutes or until soft, definitely taste one!
Cook brown rice as directed in veggie bullion.
While you got all that going on, in a medium saute pan at medium high heat add remaining olive oil to pan and heat. Add onion and cook for 2-3 minutes. Then add garlic, black beans, red pepper, chili powder, and corn. Cook for 8-10 minutes and then remove from heat(If it gets dry during cooking just add a little water) Now would be a good time to give a taste and see if any seasoning is needed. I don't add a lot of salt to my recipes so check it out and add if you need it. Add rice mixture, and sweets to veggie mixture and combine. Then add fresh cilantro, juice from lime, nutritional yeast, and cheese if using. Combine together.
Place some of that yummy mixture onto a wrap and roll it up chipolte style! I like to batch cook these and freeze them individually to have for a quick lunch.
To re-heat from frozen. Heat in microwave for approximately 2 minutes and let sit for one minute. Depending on size this should work. I cover wrap with a damp cloth to keep it from getting hard and chewy.
