I HAVE MADE THIS DISH AS A SALAD BEFORE AND ITS PRETTY GOOD BUT I LOVE IT IN A WRAP! IT CAN BE SERVED HOT OR COLD SO YOU CAN MAKE SOME OF THE THINGS AHEAD OF TIME, LIKE THE DRESSING AND THE ROASTED VEGGIES. HERE IS SOME OF THE POWER HOUSE INGRIEDIENTS IN THIS DISH!
High in Iron, vitamin k, and is also filled with antioxidants. Its a great anti inflammatory food and is also good for cardiovascular health!
SESAME SEEDS AND TAHINI(SESAME PASTE)
Helps lower cholesterol, protect heart health, and improve blood pressure. Can also help burn fat and improve nutrient absorption. Does it get any better then that!
A good source of fiber, Vitamin C, potassium, manganese, and folate. Beets will boost your stamina due to their high nitrate content. They contain betaine which fights inflammation, enhances performance, and helps the body's detoxification process.
These babies contain vitamin D which plays a role in energy levels, moods, and help build healthy bones. Also helps support your thyroid gland. Good source of Potassium which performs many essential functions like, relax muscle contractions and reduce swelling. Also a good source of vitamin A(In the form of beta carotene), vitamin C for immune function, phosphorus, niacin, dietary fiber.
WHAT DO WE NEED?
3 Good sized sweet potatoes diced
4 Large beets diced
2 tablespoons of olive oil
1 Teaspoon of salt
1/4 Teaspoon of pepper
1/4 Teaspoon of garlic powder
1/4 Teaspoon of onion powder
A couple of handfuls of baby kale or what ever kind you prefer.
Whole grain 10 inch wraps.
1 small apple thinly sliced.
Sesame seeds to sprinkle. I used black.
FOR THE DRESSING
1/4 Cup of tahini
2 Tablespoons of apple cider vinegar
2 Tablespoons of honey
2 Tablespoons of spicy mustard
1 Garlic clove
Add 1/4 to 1/2 cup of water to desired thickness. I made this thick because its going on the wrap.
WHAT DO I DO?
Preheat over to 425. Add olive oil, salt and pepper, and other spices to the diced veggies. Place coated veggies on a parchment paper lined baking sheet and bake for 30 minutes. Remove from oven and let cool while you make the dressing.
For the dressing, add all of the ingredients to a blender or food processer except water. Blend until smooth. Add water 1/4 a cup at a time until you get desired thickness.
TO MAKE THE WRAP
Take the wrap and put some kale first.
Then add a few thin slices of apple.
Add roasted veggies.
Top with dressing and some sesame seeds!
