This will be the last recipe for the month of January in the category of soups and stews. One of my favorite comfort foods....pasta fagioli, love it!! I had this a long time ago at a favorite Italian restaurant on Long Island, wish I could remember the name. I've been trying to perfect it ever since, so here is my version. Next month look for meals and snacks for fueling and for recovery from your hard workouts!
WHAT YOU NEED
1 Tablespoon of olive oil
2-3 Cloves of garlic minced
1 Large Onion diced (reserve a small amount for garnish)
1 Large carrot diced small
3 Cups of fresh spinach, chopped
1 Can of cannellini beans rinsed
1 Large can of crushed tomatoes
4 Cups of veggie broth
1 cup of ditalini pasta
Red pepper flakes (optional)
WHAT YOU NEED TO DO
Heat that olive oil at medium heat in a large stock pot. Add onion(reserve a small amount for garnish), carrot, and garlic, sauté until the onions start to look clear. Add the beans and red pepper flakes, heat through. Add spinach, when spinach starts to wilt add crushed tomatoes, heat through. Add veggie broth and heat through. Let simmer until carrots are tender. Add the ditalini and cook until the pasta is done. Pretty quick and simple and super delish!!
