Every once and a while everyone needs some chocolate, something sweet, even when you're trying to be healthy. With this dessert you can the best of both worlds. Satisfy your sweet tooth and stay on track health wise!
I had a hard time wrapping my head around using the canned chickpea liquid (aquafaba) for a dessert. Let me tell you though, this is good stuff! Now I'm not saying you should eat it every night, but every once in a while when you get that chocolate craving it's perfect!
What you will need
2 - 15 oz. cans Chickpeas with unsalted liquid. Use the aquafaba only for the recipe. Reserve chickpeas for another use.
2 - approx. 3.5 oz Dark chocolate bars(at least 75%-85% Cocao).
Stevia to taste ( I used stevia extract, add small amounts until the taste is good for you)
1 Tsp. of Vanilla extract
1 Tbsp. of non-dairy milk
Take the aqufaba from both cans of chickpeas and whip with a mixer the same way you would mix cream to make whipped cream. Add vanilla and stevia and whip until peaks form. Taste and add more stevia if needed.
To prepare chocolate, melt in a double boiler or just use two pans. Add the milk to the chocolate mix and stir until completely melted. Do not get any water in the chocolate, its will make it harden. Once melted, remove from heat.
Add small amounts of the aquafaba mixture to the chocolate and fold together. Continue to slowly fold the two mixtures together until completely mixed.
You can either put these in little individual serving dishes or one big container. Place in fridge until the mixture is firm. Serve alone or with some coconut whip cream on top!!
