I saw a recipe this week with zucchini noodles and thought I would give it a try! I bought a veggie noodle maker a while ago because I was appalled at what the food store charged to buy the noodles prepared. So if needed you can purchase veggie noodles prepared for you in some food stores. However, I suggest purchasing your own noodle maker. They are super fun and veggie noodles are a nice substitute for pasta.
The one I purchased which has been serving me well so far is called Veggetti Pro. Very easy to use.
What you will need
2 portabellas chopped in half and sliced
1 pint of cherry tomatoes chopped in half
4-5 garlic cloves diced
3 small zucchini prepared with Veggetti
1 small yellow squash prepared with Veggetti
1 15.5 oz can of cannellini beans, drained
½ – 1 cup of veggie broth
¼ tsp onion powder
¼ tsp garlic powder
½ tsp red pepper flakes, or more if you like it hot!
salt to taste, you might not need salt depending on the veggie broth.
1 tbsp lemon juice
3 tbsp EV olive oil
What you need to do
In a large skillet heat olive oil on medium heat. Add tomatoes and garlic and saute for about 4 minutes. This is where I'll add some veggie broth as needed when the pan gets dry.
Add mushrooms and saute for about 5 minutes, add veggie broth as needed. Add onion powder, garlic powder, red pepper flakes, lemon juice, and salt if needed. Add more veggie broth.
Add beans and heat through, about 4 minutes. The sauce in the pan should start to thicken.
Add your veggie noodles and heat through for about a minute. Remove from heat and let sit for about 5 minutes. Veggie noodles are very easy to over cook, this is why I remove from the heat.
This is a great Spring/Summer light dish, remember all those zucchini's your garden, and your friends will produce! Enjoy.
