The signs of spring are trying to breakthrough where I live. With the hopes of trying to push it along I decided to make a salad to support Mother Nature along the way.
Very quick and easy, 5 ingredients, and healthy. This can be a great lunch by itself or a delicious side dish. This recipe is a keeper. Lets get started!
What you will need:
1 ½ Cups of cooked quinoa
¼ Heaping cup of dried cranberries
½ Red pepper, diced
10 Asparagus spears chopped into ½ inch pieces, steamed.
1 Large bunch of greens chopped(about 3 to 4 cups chopped)
I used mixed greens which included arugula. This added nice flavor. Would also work well with spinach or kale.
2 cloves of garlic diced
1/2 tsp. Oregano
3 tbsp. Of Olive Oil
2 tbsp. Apple cider vinegar
2 tbsp. Agave
Salt and pepper to taste
What you need to do:
This is super easy, make sure the Quinoa is cooled or at room temperature. Mix all salad ingredients together. Whisk all dressing ingredients together in a separate bowl and add to the salad. Mix well. That's it you're done. Looks pretty fancy too! I'm having this one for lunch today. I hope you enjoy!
