This is a delicious, healthy salad that you can whip up quickly and serve as a one dish meal. Its loaded with protein and antioxidants so dig in and enjoy!
As with most recipes, I was just making this up as I went along. I have to say I'm not sure I liked the cucumber with the strawberries. When I made this for myself I added a whole cucumber, I suggest you either ditch it completely or maybe just do half. I'll leave this up to you, if you love cucumbers then just go for it!
I used red quinoa for this but any quinoa would work well.

WHAT YOU WILL NEED
FOR THE DRESSING
½ cup olive oil
¼ cup lemon juice
1/8 cup maple syrup
3 cloves of garlic, minced
Salt and pepper to taste (Want to add some heat? Toss in some red pepper flakes)
FOR THE SALAD
1 small bunch of kale, cleaned rinsed and chopped with stems removed. Or 1 bag, to make things quicker and easier!
½ cup of shredded red cabbage
½ cup red onion diced
½ cucumber halved and thinly sliced
small container of strawberries sliced
1 cup of cashews
1 cup of cooked quinoa, I used red to add some color.
Small head of broccoli chopped into very small bite size pieces
1 tsp lemon juice
dash of salt
WHAT YOU NEED TO DO
To prepare kale, add lemon juice and salt and massage kale gently for a minute until it softens. Set aside in a large bowl.
To prepare dressing, combine all ingredients and whisk until blended. Set aside.
Add all the veggies, strawberries, cashews, and quinoa to the kale and gently fold together. Whisk the dressing again and add to the salad. Mix gently, and you are ready to serve! I like to have some extra cashews to add to the top. Quick, easy, healthy, yummy, and filling. How can you ask for anything more.
