I get a lot of questions from clients about how can they feed their family something fun, quick, healthy, and that their kids will eat. Well this is super easy, and requires no cooking. If you know your going to have a busy week, prepare this ahead of time. Even if you decide to do all the chopping at mealtime, this should only take 15 minutes!
WHAT WILL I NEED
6 10 Inch whole grain wraps. You don't want to eat wraps? Get some green leaf lettuce and wrap it up in there!
Veggies of your liking! You know what your family likes. Plus, throw in a few new things to make it interesting.
For this wrap I used:
Green leaf lettuce
Roasted Red Peppers
Artichoke Hearts (packed in water and drained)
Hummus (make your own or if your don't have time, buy some!)
For the Hummus:
2 15 oz cans of chickpeas (one drained, one with the liquid)
¼ cup of tahini
1 tablespoon olive oil
¼ cup of lemon juice
2 garlic cloves
1 teaspoon cumin
Sea salt to taste
This is the basic recipe that came with my Vitamix, favorite kitchen appliance of them all! Be creative with this and make it your own. Add some red pepper, more or less garlic, or maybe some red pepper flakes. What ever you're into! Put ingredients in your Vitamix or food processor and mix it up.
Now is the fun part! Design your own wraps. Let your family decide what they want on their wrap and then roll it up Chipolte style and dig in. Kids are much more likely to eat their dinner if they help prepare it and have some creative control over the process. Believe me I know what it 's like to have three kids with very different tastes in food!
My personal wrap in the picture had, kale, spinach, roasted red pepper, artichoke hearts, kalamata olives, cucumber, radishes, green onion, roasted red pepper hummus. YUM!
This is also great to bring to work/school the next day so make sure you have left overs!
