This weeks recipe is one of my favorite quick family dinner. It is so quick to prepare, maybe 10-15 minutes. Its great for those cold nights, like today! I think everyone should make this today! You could use either spinach or escarole for this dish. I'm using spinach this week because my CSA (Community Supported Agriculture) gave me some this week that was gorgeous!
WHAT YOU WILL NEED :
2 TBSP of Olive Oil
5 Cloves of garlic, minced
1 Onion chopped
Large bunch of fresh spinach
8 OZ of Ditalini
8-10 Cups of veggie stock
1 15.5 OZ can of cannellini beans rinsed
Salt and pepper to taste. Usually there is no salt needed so definitely taste first
Heat olive oil on medium heat and add onion. Sauté until clear, add garlic and beans. Heat through. Add spinach and cook until it starts to wilt. Add veggie stock and bring to a boil. Add pasta and simmer until pasta is done. Remove from heat.
This is super quick so prep all your ingredients before you start.
