When I was looking for recipes for the Holidays I found this one from Thug Kitchen Party Grub cook book. We tested it out and we all agree its delicious! Including Max and Daisy, my dogs who taste everything.
WHAT YOU NEED:
1/4medium white onion chopped
3 cloves of garlic
1/2 cup of unsweetened non-dairy milk
1 1/2 teaspoons of soy sauce or Bragg's
1/4 cup of almonds
1 can of water packed artichoke hearts drained
2 tablespoons of flour
2 tablespoons of olive oil
1/2 cup veggie broth
1-2 cups of chopped fresh spinach
1/4 cup of nutritional yeast
1 tablespoon of lemon juice
WHAT ARE YOU GOING TO DO -
In a blender or food processor, combine the onion, garlic, milk, and soy sauce. Pulse until it forms a paste. Add almonds and pulse again make sure its smooth with no big pieces. Add the artichokes and chop but leave it chunky, or smooth if you would like.
In a small saucepan over medium heat, stir the oil and flour around until it starts looking kinda toasty and smells nutty, about 2 minutes. Gently whisk in the broth, it will get really thick. Then add the artichoke mix and the spinach and stir until the spinach gets wilted. Add the nutritional yeast and lemon juice and heat through.
Serve with some nice warm bread or crackers.
