This is another dish that I'll be making for Thanksgiving. Also happens to be one of my favorite things to make for lunch!
Preheat the oven to 400 degrees
What you'll need:
1 bag of frozen brussell sprouts
3 medium beets chopped into small cubes
2 tbsp. of extra virgin olive oil
1/4 tsp of cayenne pepper
1/2 tsp of salt
1/2 tsp of garlic powder
1/4 tsp of onion powder
Mix all ingredients together and put in a roasting pan lined with parchment paper( you can also use foil but I prefer parchment) Bake at 400 degrees for 40 minutes.
1 cup of balsamic vinegar
1/2 cup of Brown sugar
Mix together at medium heat until sugar dissolves. Bring to a boil and stir constantly. Cook until liquid reduces by half, around 20 minutes. Drizzle over roasted veggies!
Youcan make the glaze ahead and keep in the fridge until needed. Reheat before use.
